No-bake crustless mini lemon cheesecake...why NO crust? My little one loves cheesecake. However, every time when he eats, he makes sure to skip the crust. He cannot even stand to have a little bit of crumb on his cheesecake.
As you may have known, crustless cheesecake is very difficult to find. Many people love the crunch from the crust with every bite of a cheesecake. If you plan to order a crustless cheesecake for dessert in a restaurant, just forget it. Literally, there is none out there. Because of that, I decided to make my own crustless cheesecake.
I love this dessert recipe so much because having my little one with me in the kitchen playing with food is one of the best things that we both enjoy. So, making my own no-bake cheesecake it is. One stone two birds.
You definitely can use this recipe on mini-crusts or regular graham cracker crust. Step-by-step instructions are shown after the no-bake crustless mini lemon cheesecake recipe.
Prep Time: 10 Minutes Cook Time: ZERO Serving: 6+
2 Bars 8-oz Cream Cheese (in room temperature)
1 jar (10oz) Lemon Curd
1 tsp Lemon Zest
1/4 cup Powder Sugar (optional)
1 tsp Lemon Juice (optional)
6 Slices Lemon (for garnish only)
6 Mini Graham Cracker Crust
Same ingredients as above, but skip the muffin pan and cupcake liner
Use regular size pre-made graham cracker crust and transfer the filling into it.

Chill it in the fridge for 4 hours or overnight and serve
