Which Should You Use?

Parents, is cooking in the kitchen with your kids on your to-do list this summer? This is a continuation of our last month newsletter.

One of the most frequently used tools is knife. My teenage son asked me a very interesting question the other day which raised my concern. So, I thought that it would be a good time to bring this up.

"Which Knife Should I Use?"

My son started to get into the kitchen cooking with me since he was around 5. As he gets older, he thinks that it’s better to have mom to cook it instead of by himself because there is no concern of overcooking or undercooking the food.

But from my perspective, learning to cook will help him to develop independence. One day, he will leave home and go to college. I can’t be there every day cooking for him. So, I would ask him to get into the kitchen at least to cook his favorite dishes. He is mature enough that I can leave him alone by doing most of the tasks in the kitchen.

The other day, I asked him to do so and he came into the office and asked me, “Which knife should I use, mom?” I have been handing him the knife before he is in the position of picking up his own knife. As a result, when he is on his own, he is lost.

So, if you are a beginner in the kitchen or first timer of taking your kids into the kitchen cooking with you, you came to the right place.

There are 3 main factors we need to consider which knife we should pick:

1. How big is your hand? A bigger hand will be better to have a bigger knife, even you are a beginner.

2. What’s the texture of the food that you are going to cut? If it’s something like watermelon, cabbage, spaghetti squash before cooking, a bigger knife will work better.

3. If it’s something like peeling an apple or cutting some cooked sausages, a pairing knife will work.

How Does Chinese Knife Look?

Traditional Chinese knife has only one design. If you use it, you would appreciate the design which serves multi purposes. It can mince or flatten something by hitting the object hard with its big surface, such as garlic and shrimp. It can tenderize meat by using the dull side of the knife. Of course, it can cut. In fact, it can cut through some big bones.
