We are not only going to explore recipes, but also have some fun facts that you may be shocked to learn. That's why I gave this newsletter an "odd" title ^_^

Dark or White Meat?

Traditionally, chicken soup has always been using the entire chicken in both American and Chinese cooking. Once it is cooked through, you would deboned and discard the bones and add the shredded chicken meat back into the soup.

However, some picky eaters may prefer white meat to dark meat and vice versa. Secretly, I always prefer dark to white. So, if I have a choice, I definitely go with my favorite dark meat. So, what is the best solution?

Use all bone-in skin-on white meat or dark meat. I have been doing this for many years and it works as good as using the entire chicken. Nowadays, grocery stores sell in packages of 100% white or dark meat. It's no brainer when it comes to making that decision.

For white meat, skin-on bone-in chicken breasts would be the best. But it is not always available.

For dark meat, I use skin-on bone-in drumsticks instead of thighs or quarters. It is because it has perfect amount of fat without spending too much time to prep the meat.

Chicken Soup from Chinese Perspective

Chinese has many different chicken soup recipes. But most of the time the chicken will stay in the soup throughout the time that when soup is served, the chicken is overcooked and has no flavor. We do sometimes still eat the flavorless meat by dipping it into soy sauce.

Majority of time, the chicken meat is discarded. As shocking as it is that Chinese usually don’t throw food away, this most likely is one of the rarest time you will run into it.
