No-bake crustless mini lemon cheesecake...why NO crust? My little one loves cheesecake. However, every time when he eats, he makes sure to skip the crust. He cannot even stand to have a little bit of crumb on his cheesecake.

As you may have known, crustless cheesecake is very difficult to find.
Many people love the crunch from the crust with every bite of a
cheesecake. If you plan to order a crustless cheesecake for dessert in a
restaurant, just forget it. Literally, there is none out there.
Because of that, I decided to make my own crustless cheesecake.
I
love this dessert recipe so much because having my little one with me
in the kitchen playing with food is one of the best things that we both
enjoy. So, making my own no-bake cheesecake it is. One stone two
birds.
You definitely can use this recipe on mini-crusts or
regular graham cracker crust. Step-by-step instructions are shown after
the no-bake crustless mini lemon cheesecake recipe.
No-Bake Crustless Mini Lemon Cheesecake Recipe and Directions
Ingredients
2 Bars 8oz (227g) Cream Cheese (in room temperature)
1 jar (10oz / 283g) Lemon Curd
1 tsp Lemon Zest
1/4 cup (50g) Powder Sugar (optional)
1 tsp Lemon Juice (optional)
6 Slices Lemon (for garnish only)

Cupcake Liner
Directions
- Line a muffin pan with cupcake liners.
- Combine cream cheese, lemon curd, lemon zest in a mixing bowl and mix with hand mixer at medium speed until smooth.
- Add powder sugar and/or lemon juice to desired sweetness or tanginess (optional).
- Transfer to plastic bag and slip at the corner of the bag and pipe the filling into cupcake liners.
- Garnish with lemon and chill in the fridge at least 4 hours or overnight before serving.

Use hand mixer to combine cream cheese, lemon curd and lemon zest
Pipe in cheesecake filling into each cupcake liner with the help of a plastic bag

Ingredients
6 Mini Graham Cracker Crust
Same ingredients as above, but skip the muffin pan and cupcake liner
Directions
- Pipe filling into crust and garnish with lemon.
- Chill in the fridge for at least 4 hours or overnight before serving.
No-Bake Lemon Cheesecake
(With Regular Size Graham Cracker Crust)
Same cheesecake filling from this recipe can fill 6 mini graham cracker crusts or a regular size one
Directions
- Use regular size pre-made graham cracker crust and transfer the filling into it.
- Steps and ingredients are the same as "No-Bake Mini Lemon Cheesecake (With Crust)".
- Chill it in the fridge for 4 hours or overnight and serve.
