I think some of you knew that I am on Keto diet. Honestly, for
people love to eat, like me, it is tough. I don’t have sweet tooth or
any craving of any junk food before/after diet.
But limiting to
only eating certain things, it is very challenging. I do give myself a
break on Sundays to enjoy some of the food on the no-no list although
this idea is objected by many professionals. In my opinion, you still
want to enjoy life.
But why put this recipe together if I do not have any sweet tooth? Good question.
My hubby is on the diet with me. He has a sweet tooth and love junk food. So, one day, I suggested him this dessert. It is not any typical dessert made with sugar or any sugar substitute. But all the ingredients are on the ok list. As much as he loves to eat more, he also understands that Keto dessert still needs to watch his portion.
If you happen in the same boat like him, try this out.
TIPS & TRICKS
I tried milk cocoa powder and dark cocoa powder at different times. The dark one is a bit too strong in flavor. If you use dark cocoa powder, I highly recommend to add 1 tbsp at a time until it reaches to your desired doneness.
Also, as soon as you finish making this dessert, separate it into serving cups. This helps a ton in portion control.
If you choose to use dark cocoa powder, go easy on its quantity. Add more when you need it.
Keto Low-Carb Chocolate Mousse Recipe and Instructions
Ingredients
1 pint Heavy Whipping Cream
1/4 cup Truvia (+2 tbsp for more sweetness)
1 tsp Vanilla Extract
1/3 cup Milk Cocoa Powder
Instructions
- In a big mixing bowl, combine heavy cream, 1/4 cup Truvia and vanilla extract and beat mixture with a hand mixer until soft peaks formed.
- Taste and add 2 tbsp Truvia for extra sweetness, if necessary, and mix again .
- Continue to mix until stiff peaks are formed this time.
- Transfer 1/4 of whipped cream into a container; cover and chill.
- Fold in cocoa powder into the remaining whipped cream until well combined into chocolate mousse.
- Transfer chocolate mousse into 4-6 serving cups, cover with plastic wrap and chill for 4 hours or overnight.
- Add whipped cream saved earlier on top of mousse and enjoy.
