This quick easy meal is a restaurant remake.  It is also a one-pot meal ready in 30 minutes.  This dinner is way better than any comfort food.  How can you pass this awesomeness?

One-Pot-30-Minute Chunky Broccoli Cheddar Soup...I know it's a mouthful.  But the name just says it all.

You can order broccoli cheddar soup in a cafe easily.  You can also buy a pre-made one from the grocery store and heat it up at home.  But there is a big problem.  “Wait….what?  Why?”  You most likely think that I am crazy.

Well, let's see.  The one you get from the cafe is very expensive.  Think about that little bit of soup you get for the price you pay.  You can invest the same amount of money and make a pot of homemade soup to feed a family.

CHEF NOTES

I don’t feel comfortable to put hot soup into a blender, even though I love my Ninja blender.  If you have an immerse blender, feel free to blend the soup to smooth.  Otherwise, serve it with some chunky, but tender broccoli in the soup to give a rustic feel.

You can also turn this soup into a make-ahead meal.  This is also the perfect opportunity to make thick, smooth, velvety soup.  Here are the ways how you can do it

I let the soup cool down completely at room temperature.  Transfer soup into a blender and blend until smooth.  You can do either of the following:

  1. For a family meal, transfer the soup back into the original soup pot and store in fridge.  Warm soup on stove top on the day of serving.
  2. Transfer to separate container(s) and store in the fridge or freezer.  Warm it up in a microwave or stove top and serve.
One-Pot-30-Minute Chunky Broccoli Cheddar Soup


Quick Easy Meal Recipe and Instructions

1 big Vidalia Onion (diced) or 1 bag Frozen Diced Onion (thawed)
3 tsp Minced Garlic
2 lbs Frozen Broccoli Cut (thawed)
6 cups Chicken Broth
2 cups Pre-Shredded Yellow Cheddar Cheese
1 cup Pre-Shredded White Cheddar Cheese
4 tbsp Butter
2 tbsp Extra Virgin Olive Oil
1/2 cup Flour
Salt and pepper to taste

  1. Melt butter with extra virgin olive oil at medium high heat and add onion to cook until softened (about 5 mins).
  2. Stir in flour and cook for 1-2 minutes (keep stirring so flour does not stick to the bottom of the pot or burn).
  3. Stir in garlic and broth.
  4. Bring soup to a boil and add broccoli.
  5. When soup boils again, lower the heat to simmer, cover and cook for 15-20 minutes (tilt the lid slightly to allow air to go through.  This will keep the vegetables green in color).
  6. Stir regularly in between.
  7. Stir in cheese until it is all melted.
  8. Salt and pepper to taste and serve immediately.
