Salsa Con Queso California Blend Vegetables...a chip dip makes dinner?  Are you kidding?  No, I am not.  I can guarantee you that you will look at some of these chip dip in a different way.  Because this store bought item does provide a way to make quick and easy dinner possible.

You most probably think that I came up this recipe while I was eating chips.  In fact, I am not a big fan of junk food.  I save all the space on enjoying my meals.  And I can eat a lot.

How did I come up this recipe?  It was really by accident.  I always love to try something new.  One day, I am thinking to make Mac and cheese with this dip
which I did.  And it got me hooked.

This is a very versatile and flexible recipe. You can serve it as side dish or dinner. 

If you want your family to eat more vegetables, this would be a great way to start.

To make the meal more filling or to feed more people, serve pasta or rice on the side.  There will be enough sauce and vegetables to serve up a delicious family dinner.  So, even feeding 6-8 people, you can still get the dinner on the table in 30 minutes.

Of course, you can cut the quantity into half for a smaller group of crowd or family.  Other than using California Blend Vegetables, Salsa Con Queso will
also be good with broccoli and cauliflower.  Enjoy!

Easy Meal Vegetable Recipe and Instructions


4 pounds Frozen California Blend Vegetables (unthawed)
1 jar (23 ounces) Salsa Con Queso
2 tablespoons Extra Virgin Olive Oil
1/2 teaspoon salt
1/4 teaspoon black pepper

  1. Preheat Extra Virgin Olive Oil at high heat in a big deep skillet or Dutch even
  2. Add all frozen vegetables in and cover
  3. When you see the steam inside the pot, stir and cover it again to let it cook
  4. Repeat the above step for every 3-5 minutes until vegetables are cooked through and crisp tender.  About 10-12 minutes total.
  5. Fold in the salsa con Queso and enjoy
