I got off the keto train around 2020 and turned to low-carb diet. But then, craving for my favorite carbs turned into temptation until one day, I found out that I was 1/10 point from pre-diabetes during my annual physical.
So, I swore to cut as many carbs as I have to. Then, new ideas came up. This is one of those.
There is a lot of meat in this recipe. For meat eaters, this is great. I personally prefer to have more vegetables than meat. You can reduce the meat quantity by half or increase the cabbage size from medium to large. Just be aware that your cook time will change accordingly.
I personally prefer to go to the deli counter and get the cooked baked ham. It has the similar texture to the ham we serve during the holiday seasons.
On that note, when there is any ham leftover from the holiday dinners, feel free to use it in this recipe. Check out more ham leftover recipes here.
Yes, absolutely. The leftover from rotisserie chicken or leftover turkey from Thanksgiving can replace the raw chicken in this recipe.
If you choose to do so, you will only add the cooked shredded meat, chicken and ham, together before adding the cheese sauce. This not only will shorten the cook time of the whole dish, but also use up all the leftovers. It’s a win-win.
The ham quantity may not look a lot compared to the volume of the entire dish. But we all know that ham has very high sodium level. So, easy on the salt. Best is to hold until everything is ready for serving. Then, give it a try before adding more salt in it.
Nutmeg is optional in this recipe. But a little bit goes a long way. It does bring out some great flavor of the white cheese sauce. If you happen to have it, use it. Otherwise, don’t sweat it.
Not all households have heavy cream, milk or almond milk in the fridge at the same time. To cut down the number of ingredients, you can replace both heavy cream and milk with half and half.
Another option is to purely use heavy cream and enjoy the thick cheese sauce. I personally am not a cheese-cheese person. So, a lighter and thinner cheese sauce works best for me.
