I always love to make festive chocolate marshmallow pops. So, I experienced a lot of times when I need marshmallow to stay in shape could be challenging. But it is easily solved. All you need to do is to put the marshmallow into the freezer. This step is optional in this recipe. But I can guarantee you that it makes your life much easier. I highly recommend that the marshmallow stay in the freezer overnight. Otherwise, a couple hours will do.
Typically, once the cookies are out of the oven, you would transfer them to a wire rack to cool down. Since we have marshmallow mixed into the cookies, you are going to slice the cookies out of the baking sheet together with the parchment paper and cool them down on a cool surface or kitchen counter top. This will keep the cookies in good shape and not sticking to the rack because of some melted marshmallow.
