I love watching reels and any short videos online. Many of them are inspiring. Some recipes make me question whether if they can be done in different ways to make life easier. Here is one of those recipes.
I must admit that I tested the heck out of the original recipe and make several twists. And I am sure that you are going to enjoy the results tremendously. Why? Let’s find out…
Unlike many of the recipes posted on EZ-DinnerIdeas.com, this time is different. The original recipe and (my twisted) instructions are at the beginning of the page. Then, we will dive into each test and found out how the results are. After that, a brand new recipe I used in the test will be posted immediately after. Instructions are mostly the same. Ingredients are slightly different.
Ingredients
1 cup Cottage Cheese
2 Eggs
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1 tsp Italian Seasoning

The next few steps that I am going to share with you are going to be the spin-off of the original recipe.
The original recipe I learned online used a "bullet" blender. There are many of the similar flatbread recipes online do the same thing. But I only have a regular blender and use it when it is really needed to blend something. So, the first time when I made the cottage cheese flatbread recipes, I only use a fork to whisk seasonings together, then beat in 2 eggs and last cottage cheese.
There were a lot of lumps and looked a bit concerning after transferring onto a baking sheet. But it came out perfectly fine.
Conclusion: A blender is NOT a must.
I used 2 same size baking sheets (15 x 10") with slight differences of the recipes going into the oven at the same time. It may take a little bit longer to brown them the way it is supposed to be. But it’s still ok.
So, what is the other cottage cheese flatbread recipe used here?
Recipe #2:
1 cup Cottage Cheese
2 Eggs
1 tsp Dry Chives
A pinch of Salt
Use the same direction as the original recipe.
Conclusion: Yes, you can bake different flavored cottage cheese flatbread recipes at the same time in the same oven. One oven and two recipes in one shot is totally possible. It may take a few minutes longer than the original 40-minute until the flatbread is brown.
Parents, you most likely run around with your kids to sport events and some other places all the time. Been there, done that and still doing it a lot. So, it made me wondering if these cottage cheese flatbread recipes can be my to-go meal. That was the reason for this experiment.

Conclusion: This is a bonus for me because there is at least a day that we have to eat on the road. I will make a big batch of cottage cheese bread at the beginning of the week. Then, on the day that I need it, I pack some ice packs into a cooler and put my container of assembled sandwiches in there for my lunch. So, if you have the similar needs as I do, this is a great way to keep you on the keto train.
The answer is yes. It depends on how picky you are when it comes to the final result. Egg white comparatively has more moisture. With or without blending the ingredients with a blender, the extra liquid could separate from the rest of the batter easily. Because of that reason, some part of the flatbread is a bit more burned than the others.
Recipe #3
1 cup Cottage Cheese
2 Egg White (I use pasteurized egg white. The package provide the direction of how much you will need to add by converting 2 eggs to the egg white.)
1 tbsp Dry Kale
Conclusion: The moisture may be a bit too much from the egg white. That was also the reason I used dry kale, by using dry vegetables to absorb the excessive moisture.
You heard of stories about how potato chips and brownie recipes were developed through accidents. I guess my cottage cheese flatbread recipe with egg white happened in this same manner. I was 2 tablespoons short of cottage cheese. And here came the inspiration. At the time, I thought that it would not hurt to give it a try. Man, oh man...it turned out very well. So here is Recipe #4:
1 cup Cottage Cheese (2 tbsp short)
2 tbsp Sour Cream (to make up the shortage of the cottage cheese)
1/3 cup Store-Bought Pasteurized Egg White
Everything Bagel Seasoning
Conclusion: The mixture and the bread turned out very well. It was evenly cooked.

2 cups Cottage Cheese
4 Eggs
1 tsp Garlic Powder
1 tsp Dry Parsley Flakes
Conclusion: It works and most likely is better than making a single batch.
You most probably have seen many videos about cottage cheese flatbread recipes. And majority of them would add some vegetables, such as spring green, spinach, sliced tomatoes with cold cut. It is mainly because the flatbread itself is very soft and tender. So, you want to have the fillings with similar texture. Or you can make a big mess.
Here are some recommendations. You can use your leftovers from the grill, holiday turkey, ham or even the brisket. But make sure that you will bring it to luke warm, not hot, and cut them into either bite size or thinly sliced the meat before assemble them together with the flatbread.
