TIPS & TRICKS

Common Scenario in A Family with Hot and Spicy Food Recipes

This happens a lot in a family where there are some elderly and/or young children.

I still remember that when we were kids, my father and one of my younger sisters love hot and spicy food. The rest of us were not a big fan of it. We might sometimes give it a try. My other younger sister would have upset stomach whenever we consumed any food with too many spices, not to mention that she has never been a big fan of any dishes with heat, even nowadays.

In situation like this, you would need to cook something purely for those love hot and spicy food and have something else to accommodate the rest of the family. Well, there are better ways to handle it.

Ways to Make Hot and Spicy Food Family-Friendly

1) The best that you can do is to hold off the hot and spicy seasonings as much as you can. Put aside those seasonings for spicy food lovers to add later when meal is served. My father always loved to have some kind of hot sauces by his side just because of this same reason. His always-go-to hot sauce is the Chiu Chow Chili Oil. If you are more specific in pairing hot sauce to different style of recipes, you can go crazy on buying many.

My advice is to keep it simple and stick to the original flavor. Getting Tabasco, Sriracha sauce and some chili oil, no more than 5-6 of different kinds. That gives you more flexibility than having some other extra flavored or seasoned ones that don't pair well with most dishes.

2) A pinch of sugar goes a long way. My mother taught me this tip since I started learning cooking. You may be pleasantly surprised how effective a pinch, between 1/8 of teaspoon to a full teaspoon, of sugar is in any hot and spicy food. How effective is it? I recall 2 scenarios. One was a salt and pepper chicken that I add 4 different kinds of hot peppers in the marinade. My son L.O.V.E.S the heat of that recipe. One day, he asked, "Mom, it didn't have any heat in the chicken at all. What happened?" I don't normally put in any sugar in that marinade, until my Chinese instinct kicked in that one day and added a pinch of sugar.

The other scenario was making that famous buffalo chicken dip. I added a pinch of sugar and brought that dish with me in a family potluck dinner. The hot and spicy food lovers, like my sister-in-law, wondered where the heat went.

In short, for those who are not the big fan of these hot and spicy recipes, but still want to try them, you can add a ping of sugar in your portion when dinner is served. It will knock down the heat significantly.

3) A good excuse to have something sweet after dinner. This is the logic developed from the tip I shared above. Having some juice, soda or even ice-cream after the meal will help a lot.

So, there you have it. In my opinion, I prefer to try out everything instead of skipping it. It's really up to each individual.
