This recipe was inspired by 3 different recipes. One of them was my popular Chorizo cauliflower rice. Because of that, I have been thinking what other recipes I can create based on those easy ingredients.
The other inspirations were related to my heritage. If you go to Hong Kong, you can order a rice soup bowl in a mom-and-pop cafe. It is cooked rice served in flavorful and long cooking broth. It is considered as a kind of comfort food.
Another heritage inspiration was a cuisine from my father’s province, Chiu Chau. People here always make this rice soup bowl which is very similar to Chinese steamed white rice. The grains are intact. The rice is served in the starchy cooking water. You can flavored with some fermented salty black olives which is a very domestic cuisine from there.
With all that, I created this recipe.
Once the broth is added, the heat and spiciness of chorizo is significantly cut down. To me, the flavor turns out to be perfect.
However, to some people, like my mother-in-law, the soup could be still too spicy. If so, add 1/8 tsp of sugar into the soup. A little goes a long way.
Because of its flavor and saltiness, do not add any salt and pepper except it is really necessary. When I cooked it, I didn’t add any salt and pepper at all.
Yes, you can replace chorizo sausage with other sausages, such as Italian sweet sausage or bold sausage. Cook time may slightly longer.
If there is some steamed rice leftover, feel free to use it to replace cauliflower rice.

1 (8 oz)Raw Chorizo Sausage
1 bag (12 oz) Frozen Cauliflower Rice
4 cups Chicken Bone Broth (or just regular chicken broth)
1 lb Pre-chopped pre-washed kale
1/8 tsp Sugar (optional)
Salt and pepper to taste (hold it until the very last moment. You may not need any.)
