Garlic Parmesan Roasted California Blend Vegetables, this could be another pantry staple recipe for you.  I always have frozen California blend vegetables in my freezer because it is my favorite mix.  Plus, frozen vegetables always bring me a lot of convenience.  

As much as I love to serve everything with fresh ingredients, my little one schedule on top of my regular job makes it tough to prepare everything from scratch.  Therefore, short cut likes this vegetarian recipe gives me back some time I desperately need.

Prep Time: 5 Minutes   Inactive Cook Time: 30 Minutes   Serving: 4-6




CHEF NOTES

The portion shown in this recipe would be perfect to serve a big crowd as an easy side dish.  I also made it and divided into 4 portions for lunch.  No matter who or when you want to serve this delicious vegetable dish, I can guarantee you that it is S.U.P.E.R. tasty.

Feel free to double the quantity of the dressing.  Add half into the vegetables as soon as they come out of the oven.  Then, serve the rest along with this dish on the dining table.


Garlic Parmesan Roasted California Blend Vegetables Recipe and Instructions

Ingredients

3 pounds Frozen California Blend Vegetables (unthawed)

Dressing

1 tsp Italian Seasoning
1 pinch Crushed Red Pepper
2 tsp Garlic Powder
1/8 cup Grated Parmesan Cheese
1 tbsp Dried Parsley Flakes
1 tsp Salt
1/2 tsp Ground Black Pepper
1/4 cup Extra Virgin Olive Oil



  1. Preheat oven at 425F
  2. Line a roasting pan with aluminum foil for easy cleanup
  3. Add frozen California blend vegetables into the pan and spread them out evenly
  4. Bake in oven for 15 minutes
  5. Toss and bake for another 15 minutes until crisp tender
  6. While waiting, whisk all dressing ingredients in a separate bowl
  7. When vegetables are out of the oven, stir in dressing immediately and transfer to serving plate and enjoy
