CHEF NOTES

To make 6 cups of cooked rice, you will need 4 cups of long grain uncooked rice (not par-boiled) and 6 cups of water.  Refer to perfectly steamed white rice.

If you choose to use par-boiled rice, follow the directions on the package.  Beware that different brands may have different measurements.

No matter which way you choose to prepare the rice, be sure that great fried rice must use cooked rice and completely cool down.  The main purpose is to allow all the moisture evaporated from the rice.  Refer to best fried rice recipes for more info.

Personally, I love to use leftover rice.  It always feels great to find a way to re-purpose the leftover and turn it into something special.
