Quick and Easy Chicken Pasta Dinner

One-pot Cream of mushroom chicken spaghetti...this may sound like a typical easy to make chicken pasta dinner with a little bit of store bought help.

But it has a very special place in my heart.  Why?  My mom has been making this Hong Kong spaghetti dish since 1980s.  I remember this recipe well since I was a kid.

One-Pot Cream of Mushroom Chicken Spaghetti

Bringing up in a traditional Chinese family, rice and traditional dishes are dominant in our lives.  Even though my mom cooked every day and is a very creative cook, cooking something like spaghetti or any western style dishes was not common, especially with my father demanding authentic Chinese dishes all time.

But mom knows us very well.  My birthday always fell during the time of final exam at school every year.  Mom would make sure I had this dish in addition to my other favorite food.

I was making this mom's one-pot cream of mushroom chicken spaghetti the other day.  From the start of making it to the last bite, I enjoyed every moment and it felt like home.  It brought back so many sweet memories of mom.  I hope you can feel the love when you enjoy this dish.

One-Pot Cream of Mushroom Chicken Spaghetti - Use the same pot to cook the chicken mixture after the spaghetti is cooked and drained.
One-Pot Cream of Mushroom Chicken Spaghetti

Ingredients

1 pound Spaghetti
2-3 ounces cans Sliced Mushrooms (drained)
24 ounces Cream of Mushrooms
1 pound Ground Chicken Breast
1 tablespoon Extra Virgin Olive Oil
Dried Parsley (for garnish only)
1 pot of Water
1 teaspoon Salt
1 tablespoon Canola oil

Salt and Pepper to taste


  1. Bring a pot of water to boil
  2. Add salt, oil and pasta, quick stir and let it cook until al dente (if you decide to use one pot to cook it all.  Otherwise, let the pasta undercook slightly) and drain
  3. Use the same pot and heat Extra Virgin Olive Oil at high heat
  4. Add chicken in and use a spatula to break the meat into pieces and brown (about 5-8 mins)
  5. Stir in mushrooms and cream of mushrooms
  6. Keep stirring until well mixed and mixture starts boiling
  7. Toss in spaghetti until coat; salt and pepper to taste
  8. Garnish with dried parsley (optional) and serve immediately
