Sauteed zucchini is another great clean eating recipe.  If you remember the simply sauteed broccoli recipe, I bet you will love this one, too.  Both zucchini and broccoli have one common factor.  They can get overcooked easily.

When they are overcooked, do you know how the texture is like?  Yes, they get mushy.  Knowing how to control the cooking time and heat is the key.  This is the recipe for you to have a crisp tender zucchini.  You will not believe how quick you can get this on the table.  Enjoy!

Ingredients

3-4 pounds Zucchini (cut in 1" cubes)
2 Garlic (minced)
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1 pinch Crushed Red Pepper
2 tablespoons Extra Virgin Olive Oil

  1. Cut all zucchini and transfer to a cold deep skillet/Dutch oven
  2. Add the rest of the ingredients, except garlic, on top
  3. Cover and turn on to high heat 
  4. When you hear the sizzling sound loud and clear from the inside of the skillet, stir in garlic
  5. Stir frequently for another 2-3 minutes and serve
