Tips for Making This Salad

If you live close by a Chinese store, finding fresh ginger is super easy.  Otherwise, you may not find it in your supermarket.  If that's the case, get the one in the jar.  I use Spice World brand ground ginger.

My other tip for you is that have the vinaigrette salad dressing on the sour side.  I mean just the touch more.  Just don't go to the extreme.  It takes time for the dried dates to release the sweetness.  By the time the salad is served, the flavor will be just perfect.

Ingredients

1 Head Savoy Cabbage (thinly sliced; about 1.5 pounds)
4-6 Whole Dried Dates (potted and small diced)

For Salad Dressing

1/3 Cup Balsamic Vinegar
1/3 Cup Extra Virgin Olive Oil
1-2 teaspoon Honey (optional)
1/2 teaspoon Minced Ginger
1 pinch of each Salt and Black Pepper

  1. In a mixing bowl (preferably a mason jar), combine all vinaigrette ingredients together, except honey
  2. Let it sit in room temperature for at least 30 minutes to let everything marry together, especially the dried dates
  3. Taste to season
  4. Add honey if necessary
  5. Cut cabbage into 4 quarters
  6. Tilt the knife slightly to cut out the cores and discard
  7. Thinly sliced cabbage and transfer to salad bowl
  8. Pour in the vinaigrette and toss to coat
  9. Chill in the fridge for at least 2-4 hours before serving
