Spicy Peanut Chicken Broccoli Spaghetti Stir-Fry's original inspiration was from the use of satay sauce.  I found that I always use maybe 1/4 of an entire jar and the rest of it was forgotten and thrown away.

So, one day, I thought that I could make my peanut sauce with whatever ingredients that I always have on hand.  There...I save money and time by not wasting the food away.  As always, it was a big hit in our bi-weekly dinner.

Spicy Peanut Chicken Broccoli Spaghetti Stir-Fry is a recipe, not only for those love Chinese food, but also those love peanut butter.  This is way better than PB&J sandwich.

Prep Time: 10 Minutes   Cook Time: 30 Minutes   Serving: 6-8

Tips

When mixing for the sauce, add water until everything is well mixed.  This would be easier to get to the right consistency.  The thickness should be very similar to ranch dressing pouring out of a jar.  It is better to be too thin than too thick because once the sauce is stirred into the pasta, it looks like there is almost no sauce at all.

I personally do not like crunchy peanuts in my pasta or noodles.  But do feel free to add a handy of salty peanuts to garnish or for some crunch.

Spicy Peanut Chicken Broccoli Spaghetti Stir-Fry

Ingredients
1 lb Skinless Boneless Chicken Breasts (cut in bite size)
1 lb Broccoli Crowns (cut into florets)
1 lb Spaghetti
1 Pot of Water
1 tsp Salt
4 tbsp Canola Oil (divided)
2-3 scallions (optional; chopped for garnish only)

Marinade
1/2 tsp Salt
1/4 tsp Black Pepper
1 pinch of Sugar
1/2 tsp Garlic Powder
1/4 tsp Ground Ginger
1 tsp Superior Light Soy Sauce
1 tbsp Canola Oil

Sauce
1/2 cup Creamy Peanut Butter
2 tbsp Sriracha Sauce
1 tsp Salt
1/2 tsp Black Pepper
1/4 cup Superior Light Soy Sauce
1 tbsp Superior Dark Soy Sauce
1 pinch of Sugar
1 tsp Sesame Oil
1 cup Water

  1. Mix all ingredients and seasonings from the list of marinade in a mixing bowl
  2. Stir in chicken and toss to coat
  3. Let meat marinate for 4 hours or overnight
  4. On the night of serving, bring a pot of water to boil
  5. Add 1 tsp salt, 1 tbsp canola oil and broccoli florets
  6. Submerge vegetables into the hot water and take out with a slotted spoon immediately
  7. Transfer vegetables into a big bowl and set aside
  8. Keep the same pot of boiling water and add pasta
  9. Quick stir and let it cook until al dente and drain
  10. While waiting, prepare the spicy peanut sauce by combining everything, except water, in a mixing bowl
  11. Add water after everything is well mixed
  12. Taste to adjust seasonings
  13. The sauce consistency is very similar to ranch dressing pouring out of a jar
  14. Use the same big skillet/skillet
  15. Heat 3 tbsp canola oil at high heat
  16. Single layer chicken in the skillet and let meat brown for 3-5 minutes
  17. Turn it over and cook for another 3 minutes at medium high heat
  18. Add pasta and sauce; toss to coat
  19. Add broccoli and scallions for garnish; serve immediately
