This chicken recipe gives you the convenience to serve the tortillas on the side for your family who are not in diet and doesn't worry about too much carbs. So you only make one meal, diet or not, for everyone. Best of all, everybody enjoy it together. To me, that is one of the best things in the world.
If you need to serve the tortillas, wrap the stack with aluminum foil. Put it into the warm oven after taking the chicken out for resting. Serve them along with the chicken. Also, if you decide to serve with tortillas, feel free to add other ingredients, such as sour cream, cheese, avocado and so forth.
Same recipe applies to any parts of the bird. If you cook with bone-in skin-on chicken breasts, stick with the breasts for same cook time. Same principle, same method if you choose to cook a different part of the bird.
There are different packages of Fajita mix. If you cook this easy chicken fajitas recipe often enough, I highly recommend to buy the one in a jar. It is much more economical.

4-5 lb Bone-in Skin-on Chicken Breasts, Thighs or Drumsticks
2 Envelopes Fajita Mix (or 5 tbsp Fajita Mix from the jar and 1 tbsp Salt)
3 bags (1lb each) Frozen Stir-fry Mix (aka Pepper Onion Mix)
2 tbsp Extra Virgin Olive Oil
